There is a particular kind of magic that only happens in early Summer — that fleeting, golden in-between moment before the heat gets serious, when the air still carries the ghost of a Spring breeze and everything smells like cut grass and possibility.

The days stretch long and lazy, the light goes amber at six o’clock, and if you’re lucky, you catch yourself standing at a farmers market stall, wordlessly stacking pints of strawberries into your bag like you have absolutely nowhere to be.

That’s the feeling I want to bottle. That feeling of just being here — unhurried, unscheduled, and completely absorbed in something as simple and beautiful as ripe red fruit.

This Strawberry Jam Galette is my love letter to all of it.


The Farmers Market, First

I will never stop being a person who makes a full Saturday morning ritual out of the farmers market. In New York, the moment the local markets start bursting with summer color — those first towers of strawberry pints glowing like rubies under the morning light — something shifts in me. The city slows down. Or maybe I do.

There is something so grounding about buying food that still has dirt on it, from a person who grew it, in a season that actually makes sense for it. Peak-season strawberries are an entirely different food than the ones you pull out of a plastic clamshell in February — they’re jammy and fragrant and almost wine-dark at their hearts, and they will make your whole kitchen smell like a dream.

That’s the only ingredient rule I’ll insist on here: get the best strawberries you can find. Everything else — the whole wheat pastry dough, the lemon zest, the touch of vanilla, the scattering of fresh mint — that’s all window dressing for the star.


Why a Galette?

Because life is too short for fussy pies.

A galette is the rustic, free-form, deeply *unfussy* cousin of the classic pie, and I am entirely devoted to it. There are no pie tins to grease, no crimped edges to perfect, no blind baking, no pressure. You roll out a rough circle of dough, you pile your beautiful filling in the center, you fold the edges up and over like you’re tucking it in for the night, and you slide it into the oven. That’s it. That’s the whole thing.

The imperfection is the point. The golden, craggy folds of pastry that bubble and caramelize at the edges, the jammy fruit filling that oozes and pools onto the parchment — it looks like something that came out of a farmhouse kitchen in the French countryside, which is exactly the energy I’m going for. Effortlessly, rustically gorgeous.

This particular galette is built on a flaky whole wheat pastry crust — nutty, slightly earthy, and sturdy enough to hold all that luscious filling without getting soggy. A layer of strawberry jam goes down first, deepening the berry flavor before the fresh fruit even enters the picture. Then it’s piled high with halved strawberries that have been tossed with agave or honey, a squeeze of bright lemon juice, lemon zest, a whisper of cornstarch to help it all set, and a touch of pure vanilla that rounds everything out in the most quietly seductive way.

Forty-five minutes in the oven and your kitchen will smell like a dream. The crust goes golden and shatters at the touch of a fork. The berries collapse into glossy, jammy pools. Scatter a few torn mint leaves over the top, add a scoop of vanilla ice cream or a cloud of fresh whipped cream, and you have arrived somewhere very, very good.

Slow Down, Friend

Here’s the thing I really want to say — maybe even more than I want to talk about pastry dough.

Summer has this sneaky habit of filling up before we ever get the chance to actually live in it.

Between the schedules and the obligations and the feeling that we should be doing something more ambitious than sitting on a porch eating berry galette or enjoying a glass of rose at brunch with the people we love — we blink and it’s September.

Don’t do that this year.

Make the galette on a Tuesday. Eat it on the fire escape, or in the backyard, or on a blanket in the park.

Open a bottle of something cold and sparkling. Let the evening go on longer than it should.

Let the conversation drift wherever it wants to go. Feel the breeze on your arms and the sugar on your lips and resist every urge to be productive.

There is nothing more artful than that.

Summer fruit is one of the most beautiful, most fleeting gifts the natural world gives us — those few weeks when strawberries are actually strawberries, when eating a piece of fruit is a full sensory experience rather than a nutritional obligation. This galette is a way of honoring that. Of saying: I noticed. I was here. I made something with my hands for the people I love.

That’s the kind of cooking that feeds more than just the body.
